Mexican Beef Salad


100 g beef steak

1/4 tsp each smoked paprika, ground cumin, ground coriander

1 cup lettuce, shredded

1/4 cup corn kernels

1/4 cup canned black beans, rinsed and drained

1/2 cup tomato, diced

1/4 cup coriander leaves, diced

1/8 cup pickled jalapeno

1/4 avocado, diced

1/2 lime, juice

1 tsp olive oil

 

METHOD

Rub the spices on the steak. Heat a frypan, drizzle with 1/2 tsp olive oil and cook for a few minutes each side, until it is done to your liking. Remove from heat, and rest for a few minutes.

Toss the lettuce with the corn, black beans, tomatoes, coriander, jalapenos and avocado.

Thinly slice the beef and place on top of salad.

Drizzle with lime juice and remaining oil.
