Lazy Evening Omelette


2 eggs, whisked

1 cup broccoli, cut into small pieces

1/4 red onion, thinly sliced

1/2 cup sweet potato, finely diced

1 cup rocket

1 tbsp oil

1/4 avocado, mashed

1 tbsp sauerkraut

 

METHOD 

Place half the oil in a frypan and cook the sweet potato and onion for approximately 5 minutes, until cooked through. Add the diced broccoli and fry until it starts to colour, then toss rocket through to wilt. Remove from heat.

Add the rest of the oil to the pan, pour in the whisked eggs, and swirl the pan around so they evenly coat the base. Place the cooked veg mixture back on top of the cooking eggs. Cook over medium heat for a few minutes until the eggs have cooked through. Using an egg flip, fold the omelette in half over itself, then turn out onto a plate.

Top with mashed avocado and sauerkraut.
