Grazing Plate Tuna Nicoise


90 g tin tuna in spring water, drained

1 small egg, boiled

1/4 cup kalamata olives, pitted

6 small cherry tomatoes

1/2 cup green beans

1 cup cos lettuce, shredded

1 tbsp extra virgin olive oil

1/2 tbsp red wine vinegar

1/2 tsp seeded mustard

 

METHOD

Place the beans in boiling water and cook for 3 minutes. Drain the boiling water and plunge them into iced cold water immediately.

Arrange on a plate in little piles of the lettuce, tomatoes, olives, tuna, boiled egg, and beans.

Make the dressing by combining mustard, vinegar and olive oil and then drizzle over the salad.
